Hi and welcome to the forum - because of the way dual channel works - I think you need pairs of memory sticks to use Dual Channel 'Mode', therefore using 3 sticks would be single channel

No, NF-7 as well as all other nVidia2 boards support dual channel even with different memory modules due to independent controllers. You should get the "dual channel message" during booting from the BIOS (sometime the monitor is to slow to switch on fast enough).

my NF-2 board was apparently running in dual channel with 1 corsairXMS 512Mb (dual channel) and 1 generic 256 Mb wich was definatley NOT dual channel!!!!! also make sure you have them in the wright slots! check your manual and see wich are the supported slots

I have 2-256 crucial 3200 in dimm slots 2 and 3. Also 1-Spectec 2700 512 in slot 1. Cpu-z reports 256 in dimm 1 and 3 and spectec 512 in dimm2. Also shows dual channel and works fine. My board or cpuz wrong?

Sometimes would be great reading the manual... Dual channel works with 3 modules, but on maximum DDR333 mode, because the 3rd slot cannot go DDR400...

Not sure if above is reply to my question, but I have read the manual. My question is why does Sandra and cpu-z report differnt modules in Dimm slots than are actually installed? Should I ignore manual and install them as Cpu-z reports? Thanks. This forum has always been helpful but lately sarcastic answers seem to rule. This isn't Doctor Bombay is it?

RTFM. As said, it has 2 independent controllers, so it will work in dual channel mode with 2 or 3 memory modules...
